“My top priority is to select ingredients that can enhance the taste and flavour of my recipe.”

For Kim Eun Nyeon, Head Pastry Chef at the "doux à monter" bakery and pastry shop in South Korea, craftsmanship begins with the selection of quality raw materials. He has chosen Lescure, PDO Charentes-Poitou butter, which gives him the guarantee of quality products.

Can you introduce yourself?
Hello, I am Kim Eun Nyeon, the owner and pastry chef at “Doux à monter”, which is located in Gyesan-dong, in Daegu Metropolitan City.

What is a Committed Artisan for you?
A Committed Artisan is a Chef who is passionate about seeking out the highest quality ingredients and crafting everything from scratch.

What is important in a pastry Chef’s day-to-day work?
I focus on accurately measuring the ingredients I use and always sticking to the same procedure in my recipes, because that is crucial to obtaining consistent, high-quality products throughout year.

Why did you choose Lescure butter?
To my delight, Lescure did not just meet my high standards - it exceeded them, making it the obvious choice for me. The butter’s remarkable suppleness plays a crucial role in making desserts and pastries, which guarantees consistently high-quality results.
